If your top priorities are high volume and consistently high quality, this steam cooker is for you.  This innovative and proven design delivers even steam cooking and boasts a high-capacity system for quick throughout.  Each compartment is equipped with a perforated steam inlet baffle positioned for precise application of high velocity steam across the surface of food.

• Natural Gas or LP Gas
• Mounted on a cabinet base containing gas fired steam generator
• Double-wall construction with 1” (25mm) thick insulation between cooking compartments and exterior walls
• Two 18 gauge stainless steel welded cooking compartments with coved internal corners and a 16 gauge stainless steel front panel
• Each compartment has a positive slam action, field-reversible door, (factory installs units with the door opening from the right)
• Door latches are spring loaded
• The cooking compartment is equipped with a door interlock (switch) that shuts off steam to the cooking units when the door is open
• Controls for each compartment will include a 60-minute load compensation timer with constant steam position, an indicator light, steam inlet solenoid valve, pressure relief valve, vacuum breaker, an automatic cold water steam condenser system and a removable drip trough.
• Base with stainless steel frame will be equipped with 6” stainless steel legs and adjustable bullet feet, reinforced stainless steel counter-top, and hinged door(s) with magnetic latches.
• Unit will include safety valves, low water cut-off, water strainer, cathodic protector, and also an access for total concept delimer/descaler, and PM Plus (a corrosion inhibitor).
• Boiler controls are conveniently located in a slide-out, “works-in-a-drawer”, style enclosure for ease of serviceability.
• Each compartment will accommodate any of the following optional pans: (6) six 12”x20”x1” deep pans; OR (3) three 12”x20”x2.5” deep pans; OR (2) two 12”x20”x4” deep pans.
• Gas fired, A.S.M.E. constructed and National Board Registered, 15PSI steam generator rated at 100,000 BTU-Model 3500M24G100A.
• Electrical Connection: 120 VAC, 60 Hz, 1/2” conduit connection or equivalent.  Use wire suitable for at least 90°C.
